    Homemade Snickers Cheesecake Bars

    These Snickers Bars are layered with chocolate, cheesecake filling, caramel, peanuts and more chocolate. It's sheer perfection.

    I love chocolate.

    I love cheesecake.

    I love caramel.

    I love peanuts.

    I love more chocolate.

    Most of all I love Snickers Bars.

    If we have any Snickers in the house they never last long. It's one of my favourite chocolate bars. Since I was young. So I've loved them for a LONG time. 

    So when I was baking the other day I decided to make homemade Snickers Bars. I was on a serious cheesecake kick so I knew I wanted to make the filling with a touch of cream cheese. So I did.

    The result is an amazingly rich and over the top dessert. It is so tasty you are not going to be able to resist it. 

    They are messy so go into making them knowing that!!

    Anyone who makes these and is able to cut them perfectly must have frozen theirs completely. If you don't cut them while frozen it results in a total mess. 

    My suggestion is to score them while not quite frozen, then cut them with a warm, sharp knife once they are frozen. That way you get perfect bars.

    Keep frozen until shortly before you want to serve them. Then pop them in the fridge to keep them cold so they don't get soften up too much.

    Homemade Snickers Cheesecake Bars

    These Snickers Bars are layered with chocolate, cheesecake filling, caramel, peanuts and more chocolate. It's sheer perfection.

    Ingredients

    Layer 1

    • 1.5 cups semisweet chocolate chips
    • ¼ cup creamy peanut butter

    Layer 2

    • 7.5 oz marshmallow fluff
    • ¼ cup creamy peanut butter
    • 1.5 cups confectioners sugar
    • 8 oz cream cheese
    • 1 cup dry roasted unsalted peanuts

    Layer 3

    • 11 ounces caramels
    • ¼ cup heavy cream

    Layer 4:

    • 1.5 cups semisweet chocolate chips
    • ¼ cup creamy peanut butter

    Instructions

    • Line a 11 x 7 inch baking dish with parchment paper. Set aside.

    Layer 1:

    • Use a double boiler to melt the chocolate chips and peanut butter. Stir occasionally until smooth. Pour into the baking dish. Pop this in the freezer for about 5 to 10 minutes to harden.

    Layer 2:

    • Combine the fluff, peanut butter and confectioners sugar in a mixing bowl, stir until combined.
    • Pop the cream cheese in a stand mixer and whisk on medium speed until smooth and fluffy. Add the ingredients from the other bowl into the mixer and whisk until combined. Pour over the chocolate layer you placed in the freezer earlier. Press the peanuts into the mixture slightly. Pop back in the freezer for about 5 to 10 minutes.

    Layer 3:

    • Use a double boiler to melt the caramels in the cream. Simmer over hot water until caramel is smooth. Allow to cool slightly. Now pour the cooled caramel over the filling mixture and peanuts. Pop back in the freezer for about 5 to 10 minutes.

    Layer 4:

    • Use a double boiler to melt the chocolate chips and peanut butter. Stir occasionally until smooth. Pour into the baking dish. Pop this in the freezer for about 5 to 10 minutes to harden.
    • Cut into squares with a sharp knife. This recipe is a bit messy. Just roll with it. It's totally worth it.
    • Serve with a big old Snickers loving smile!

      LOVE this recipe! Snickers remind me of my dad. He used to love Snickers and any bars that made it into the house were confiscated by mom and packed in his lunch. 🙂 I might make a batch of these but I would share!

      Thank you for the forewarning about cutting them while they are at least partially frozen. I bet they are good to eat even when they are frozen. Very special bars-----could be the center piece of your goody part of your table. I like to have an appetizer and goody event during the holidays. There are so many yum yums out there to nibble and taste and go aaaaah about.

        You could try Biscoff (cookie butter). It will taste a bit differently but my guess is it would be amazing in these. Or you could try nutella for a real over the top version. I'm guessing you have peanut allergies. You could try just leaving it out. Maybe add a little hit of vanilla bean for a more natural, earthy bar. That would probably rock and now I actually want to make vanilla bean bars. So don't be surprised if vanilla bean bars hit the blog next month Taylor. Ha
