    Meatball Bites

    These Meatball Bites are the perfect appetizer or snack recipe for parties or game day! They're an easy to make bite sized slider recipe!

    Welcome to Day #3 of Appetizer Week, a multi-blogger event co-hosted by Kim of Cravings of a Lunatic and Kristen from Frugal Antics of a Harried Homemaker.

    Whether you are a Broncos fan or a Seahawks fan , we wanted to make sure you had plenty of ideas for your game day spread. Each day we will be dishing up a different set of appetizers.

    We hope you enjoy this fabulous group of recipes. Tune in each day starting with Monday, January 20 and ending on Saturday, January 25.

    I've said it before and I'll say it again, I dislike football. Not the game itself, but just watching sports on TV in general.

    Now if you take me to a game I'm much more inclined to get all sassy and competitive. I start off being calm and quiet, then something snaps and I'm screaming like a lunatic and getting way too involved.

    I think it's why my family never brings me to games. There may be some connection there.

    Today I'm giving you tiny little meatball bites. They're like sliders but with meatballs instead of tiny burgers. Add a little marinara and some cheese and it's a party. Perfect for game day. Or any day really.

    Meatball Bites

    These Meatball Bites are the perfect appetizer or snack recipe for parties or game day! They're an easy to make bite sized slider recipe!

    Ingredients

    • 1 pound ground beef
    • ½ cup rolled oats
    • 1 egg
    • ½ cup milk
    • 1 teaspoon garlic salt or powder
    • 1 teaspoon onion salt or powder
    • 1 teaspoon parsley
    • 1 teaspoon worcestershire sauce
    • ½ cup flour
    • ½ teaspoon smoked paprika
    • Dash salt
    • 1 cup marinara sauce
    • ½ cup mozzarella cheese
    • 1 baguette cut into bite sized sandwich pieces
    • Leaf lettuce optional
    US Customary - Metric

    Instructions

    • Preheat over to 350 degrees F.
    • Spray a casserole dish with non-stick spray and set aside.
    • Spray a large skillet with non-stick spray, add a little oil and set on stove top.
    • In a large bowl mix together the ground beef, rolled oats, egg, milk, garlic salt, onion salt, parsley and worcestershire sauce.
    • In a small bowl mix the flour, smoked paprika and salt. Stir with a fork.
    • Now for miniature meatballs by hand, then take them and dunk them in the flour mixture. Then lay them in a skillet, continue until they are all formed.
    • Turn the heat to a nice medium-high heat and cook the meatballs just until all sides are browned. Careful not to stir around too much. It could break them up.
    • Once browned lay them in the casserole dish and cook in preheated oven for about 30 to 35 minutes, depending on the size of your meatballs.
    • Remove from oven.
    • Heat the marinara sauce in a small saucepan. Once it's hot you pour that over the meatballs and stir them around until coated.
    • Now start to stack. I cut some of the excess bread off and I'll use the leftover bits for making stuffing or meatloaf. You want a nice bread to meat ratio so don't be shy to take a bread knife to your baguette till you get the pieces the way you want. Leftover bread can be used in so many other dishes so it never goes to waste her.
    • Start with bottom piece of bread, then a layer of lettuce if desired, then the meatball, then drizzle more marinara over top. sprinkle with cheese, top with the top part of the baguette, and stick a skewer or toothpick in the them to hold them together.
    • Serve with a big old I love football food smile!

      Cutest little meatball sandwiches ever, Kim! I'm the same way at games. What's the point of watching if you can't shout at the umpires/coaches/players, am I right? But I especially go for the Frito pie, at least in Texas.

      adorable! i love teeny sandwiches and these would get gobbled up! I will flip back and forth while watching games, never seeing the good things but LOVE being there. season ticket holder for both college and ravens, crazy person lol

      I'm sorry that you don't love football. Maybe it would help if there was a team there that you could pull for? We could turn it into the International Football League. 🙂 I love these, but the biggest problem is that I'd have to eat the entire plateful. They look amazing.

      Oh I can smell Superbowl with these little yummers. Since we don't have any California team in the Superbowl, I would just root for the food like yours. It's for sure a winner. Thank you Kim! 🙂
