So simple to make, this mixed berry smoothie uses just a few ingredients. Give it a quick whir in the blender and you have a healthy start to your day!
Hello peeps. Long time, no talk. I know right. Where the heck have I been?
All is well. Just been a crazy time here at the Beaulieu household. Lots going on. Always. But it’s all good in the hood. We’re a sturdy bunch here. We bounce back quickly. Practice makes perfect.
One thing I notice when life get chaotic, which it often does, is that we order take-out way too much. Not even kidding. When life gets nuts this gal is not cooking.
This lack of cooking leads to feeling icky. I know right. That’s a really technical term. Grammar, it’s not for sissies.
When we feel “icky” from eating out too often we start to crave healthy stuff. Stuff like salads and smoothies. This is my version of a “healthy” smoothie.
For those who swing by “ye olde blog” often you know I have IBS (also know as irritable bowel syndrome aka the bane of my existence). Those who are new here, hey guess what? I have IBS.
Everyone who has it reacts a bit differently to food and stimuli. Mine is highly aggravated by dark greens. So you will never see any smoothies on the blog that contain kale.
Sorry my kale loving peeps. I just cannot eat it. You can though. Seriously, knock yourself out. Eat your kale. Eat my kale too. Eat all the kale. Kale it up. To the max.
While you go kale crazy my smoothie will be kale-free. It’s just……fruit. I know right.
I hear gasps of horror from everyone looking for all the hidden stuff. Guess what? There is no hidden stuff in this smoothie.
This smoothie is just over here going “I’m a fruit smoothie. That’s what I am. And I’m freaking owning it. I freaking rock at being a fruit smoothie. Because fruit smoothies, not pretending to be anything other than fruit smoothies, rock”.
I know right. It’s a bit of a wordy smoothie, isn’t it? It’s okay. This is a judgement free zone. Like kale? Cool. We accept you here. Hate kale? Cool. We accept you here. Love fruit? Cool. We accept your fruit loving self here.
I think people these days are too judgemental. Everyone is so busy telling everyone else what they should be doing, thinking, saying, eating and drinking. You know what? Screw that. You do you. Stop worrying what other people think. Who freaking cares. The only person you have to make happy in this life is YOU!
So drink fruit smoothies. With kale. Without kale. Cripes, add whatever you like to this bad boy. It’s all good.
If it makes you happy, puts a smile on your face, and a little spring in your step that’s all that matters. Embrace you. We dig you. You are awesome. You totally rock.
While you’re strutting about embracing the new you that totally accepts yourself and all your kale choices in life, I’ll just be over here, sipping on a mixed berry smoothie. With no kale. Because I own my kale free existence. Like a boss.
Places to stalk Cravings of a Lunatic!
- 3 cups frozen mixed berries
- 1½ to 2 cups coconut water
- 1 teaspoon almond extract
- Place berries, coconut water and almond extract in your blender. Pulse, then blend until smooth. Should only take a minute or two to become smooth as silk.
- I suggest starting with 1½ cups of coconut water to start, then add until you reach the consistency you like. I like my smoothies very thick.
- Enjoy with a big old mixed berry loving smile!
I highly suggest not skimping on the almond extract. Almond extract works beautifully with berries. It really enhances the flavour.
You are going to totally dig this one. It’s fruity and naturally sweet. Absolute perfect. Even if you toss some kale in it!
