These No Bake Pink Coconut Cookies are incredibly quick and easy to make. They are packed with coconut and oats and only take mere minutes to whip up!
The holidays are the perfect time to whip up these no bake pink coconut cookies.
Okay, so these were not what I wanted to make. I wanted a softer pink colour, more coconut and then I wanted to drizzle them with pink chocolate and cover them in pink sprinkles. So what happened? Life happened. As it tends to do.
We had a bit of a nutty night at the Beaulieu compound yesterday. Life with hooligans can be chaotic. Not in a bad way. I love my hooligans but when stuff happens with them I morph into Mom mode. Sometimes Mom mode means there is not enough time to jazz up your cookies.
It's all good though. I would never trade a minute with my kids for prettier cookies. So today you get simple, completely not elegant or jazzed up, oddly pink cookies. You're welcome.
I learned how to make the chocolate version of these from my Mom. They are my favourite cookie in the whole world. I'll whip up a batch this weekend so I can share them with you. I honestly would take these coconut cookies over any other cookie in the world. I love the taste and the texture. They were a favourite of my father's too. I made them for him more times than I count.

Pink Coconut Cookies
Ingredients
- 4 oz white chocolate melted
- 1 ½ cup granulated sugar
- ½ cup milk
- ½ cup butter
- 1 tsp vanilla or coconut extract
- ½ tsp salt
- 3 cups oats
- 1 cup coconut
- 2 drops red or pink food colouring
Instructions
- Line two cookie sheets with parchment paper, Set aside.
- Use a double boiler to melt the white chocolate until it's smooth.
- While it's melting grab a large pot. Add the sugar and milk, cook over medium heat until the sugar dissolves.
- Add the butter and white chocolate to the pot and cook for about 1 to 3 minutes, whisking until the mixture comes together. It's going to look weird at first and you're going to think you ruined it. But keep whisking and have faith I would not lead you astray.
- Add the vanilla, salt and oats and stir for about a minute. Then remove from heat.
- Add the food colouring to the coconut, start slowly and keep adding until you get the desired shade of pink you want.
- Add the coconut to the pot and stir until combined. If you want the cookies a bit more pink you can add more colouring. It's a personal thing.
- Use a spoon to drop the mixture on the cookie sheets while it's hot.
- Allow to cool. If possible, I can't resist these ones, so I always eat some hot. Then act shocked when I burn the roof of my mouth. Apparently you never grow out of some things. Meh, moving on.
- Serve with a big old pink coconut loving smile!

Marjory @ Dinner-Mom
I just love that these are pink! Delish!
Kim Beaulieu
Thanks Marjory. I am such a pink fanatic. In high school it's all I wore. I was known as the girl who wore pink. Apparently my classmates were not very creative. lol
Laura @ Laura's Culinary Adventures
What a fun cookie color! They would be great for Valentine's Day too!
Kim Beaulieu
Thanks Laura. They taste amazing. I still want to remake them all jazzed up. One day.
claire @ the realistic nutritionist
How cute are these??!
Kim Beaulieu
Thanks Claire. I'm a pink girl.
Kayle (The Cooking Actress)

Kim Beaulieu
Thanks Kayle. I love anything pink.
Cookin Canuck
Even though this isn't exactly what you had in mind, they look darn good! I'll bet your "hooligans" gobbled them up.
Kim Beaulieu
Thanks so much Dara. I had this picture in my head of these beautiful pink Disney princess sparkly cookies but then my life went berserk. Ha, gotta love life with older kids.
Bea
Kimi - why oh why must you torture me with such delectable delicious cookies and I cannot eat them through my screen?! Love those beauties.
Kim Beaulieu
Ha, that cracked me up. Trust me I'm torturing myself too. There's cookies and baked goods everywhere right now. I swear I just heard my zipper whisper "help me".
Liz
Hard to believe a pink fluffy cookie came out of your kitchen 😉 Especially one with coconut! Love your twist on no bakes...I'd be burning my mouth right along with you!!!
Kim Beaulieu
Ha, I am so bummed I didn't pretty them up more. I may have to make them again. lol
Kristi @ Inspiration Kitchen
I'm all about pink, sprinkles, coconut, chocolate. These cookies are simply the pink bomb! Pinned!
Kim Beaulieu
Thanks so much Kristi. I am such a pink girl, I would paint my house pink if it was socially acceptable.
Thanks for pinning.
Stacy
I think I prefer the unadorned version but that's just not-usually-eating-sweets me. I love the coconut and oatmeal combo and these look perfect, exactly as they are.
Kim Beaulieu
Thanks so much Stacy. I just had this vision in my head of these over the top cookies. The taste is out of this world even if they don't sparkle. Ha.
Colleen (Souffle Bombay)
These are so fun!! I know I would love them...I adore coconut in cookies!
Kim Beaulieu
Thanks Colleen. I am a coconut fiend. We usually have to buy twice what we need because I eat it all up while using it.
Stephanie @ Back For Seconds
I make those peanut blossoms every holiday season! These look so good. Sometimes you need a simpler recipe like this rather than an over the top treat, ya know?
Kim Beaulieu
I think we all have those "favourites" during the holidays. This would be fun to make red velvet. Thanks Stephanie. I just had this vision of how pretty they would be but oats are not conducive to pretty right. ha
Joanne T Ferguson
G'day! Your pink coconut cookies look YUM and fun!
Wish I could come through the screen and try one now!
Cheers! Joanne
Kim Beaulieu
Hey Joanne, thanks so much. I wish I could share them with you. Or bake them with you. How fun would that be.

I don't make a lot of cookies in December, but if I did it would definitely be rugalach!
Kim Beaulieu
That's a great choice.
Nikki @ NikSnacks
Hey. Life happens when you're making plans lol Your pink cookies still turned out great! I want to make these and send them in a care package. They're that perfect xo
Rose | The Clean Dish
There is absolutely no need to jazz up these cookies - they are gorgeous as they are! I happen to love the color and no-bake ALWAYS works for me. Coconut and oats mixed together -- yum!!
Bobbi's Kozy Kitchen
I love these cookies Kim! They are so pretty and, being no-bake, I might actually be able to make them without needing several tries to get it right LOL
Aly ~ Cooking In Stilettos
OMG LOVE these - and I love them just as they are. Life totally gets in the way but these pink lovelies are gorgeous just the way they are. Now - since I'm in such a pink mode, I think some Legally Blonde might find it's way to the DVR - while I'm making these cookies 🙂
Choc Chip Uru
Love the colour of these sweet tropical cookies 😀
Delicious!
Cheers

I am making these ne t weekend for a bake sale. The minute I saw them I knew they would look fab !!!! I have some silver dragges that I can put on them. I think five silver balls on each will make them pass for Christmas cookies !
Thanks for sharing your great recipe !
