Fried Smashed Potatoes with Onions and Meyer Lemon Dressing

Fried Smashed Potatoes with Meyer Lemon by Cravings of a Lunatic

Made you look didn't I? I mean who wouldn't. Look at these freaking potatoes. You take baby potatoes, you boil them, then fry them in a cast iron pan in olive oil and onions. Then you drizzle them with a meyer lemon dressing that will rock your world. No lie. These potatoes are wicked good. And wildly addictive. I dare you to try to eat just one serving. You will not be able to. I guarantee it! You all know I love me some potatoes, evidenced by my rock star Aerosmith Potatoes. I could eat … [Read more...]

Roasted Cherry Tomatoes in Support of Food Bloggers for Slave Free Tomatoes

Roasted Tomatoes by Cravings of a Lunatic

Today I am posting something more serious than the usual fare I serve up. I heard about The Giving Table from Cassie of Bake Your Day. She had given me the honour of interviewing her for Burning Down The Kitchen. I always ask the folks I interview if there is anything they are working on they would like me to share. Cassie blew my mind with her small request. It was to mention her work with this organization in raising awareness about the conditions workers face in the tomato fields. Her … [Read more...]

Roasted Cauliflower for Meatless Monday

Roasted-Cauliflower-cravingsofalunatic-14

Hi folks! Just a quick recipe before I run off to the barn. We had quite a storm today so we are running out later than normal. I did enjoy the rain though. I laid on the couch and watched Supernatural. Hubs came in and asked what we were having for lunch. I may have muttered "a Sam and Dean sandwich" but I'm not sure. I was in a cute boy coma. What I utter during those moments is out of my control. It cannot be helped. … [Read more...]

Steak Saturdays also known as Yesterday’s Lunch So Late It Was Almost Dinnertime!

Hi folks. So we slept in yesterday which was a lovely treat. I even turned off my phone so no one could bug call me. Sometimes you just have to shut the world off. The quickest way to do that is to shut off the phones. You should try it some time. Very liberating. Since my phone doubles as my alarm clock I just woke up when I felt like it. Again, you should try this. It is amazing. Your body gets you up when it's ready to get up. What a concept. Of course it meant I got up at 11 am but hey, … [Read more...]

Stuffed Bell Peppers

It's late, I'm tired so shockingly (yes I know I can go on and on and on...) this will be short and sweet. Did stuffed peppers for the first time and who knew they were so good. I took some inspiration from "the joy of cooking" since I had no idea what to put in them. Then I, as per usual, deviated from the recipe a bit. Here's the result, they were delish!Stuffed Bell Peppers:Ingredients:6 Bell Peppers1 1/2 pounds of ground beef1/2 Red Onion, diced2 tablespoons beef brothOlive Oil, to keep … [Read more...]

Father’s Day Dinner and Memories of Dad

So Father's Day has come and gone. Ours was the usual busy day. Our daughter had soccer this morning. She plays on a ladies league. After a 2 year absence due to a torn Achilles she's finally able to play again. Not competitively like she used to yet. My hubby usually works Sunday mornings but he was off this week so he actually took her . Which was nice for them since he loves soccer and they don't get much one on one time these days. The bonus for me was getting to go back to bed. Which sounds … [Read more...]

Easy there pot roast, simmer down carrots, hold your lumps potatoes and don’t get cross buns!

Geez what an absence, sorry folks. Some days I'm online a lot, other times I go for days without posting. If I only had my own computer this would be so much easier to keep up with. For now it's a shared pc I can never get on since apparently school work comes first. Pfft!So nothing fancy to post. But will give some tips for pot roast dinner. And a dessert gone awry but turned out alright. One never knows what will happen til the fat lady......eats. Okay whatever, lame joke. One of those days.I … [Read more...]
