    Peanut Butter & Nutella Swirl Cookies

    These Peanut Butter Nutella Swirl Cookies are easy to make and chock full of deliciousness. Nothing beats homemade peanut butter cookies!

    Honestly, this girl is a serious cookie fanatic and these peanut butter nutella swirl cookies are one of my favourites of all time.

    I mean, who doesn't love peanut butter cookies?

    No one! That's who!

    This recipe was concocted using another cookie recipe, Momzie's Peanut Butter Cookie recipe. I actually started playing around with it and as a result of some experimenting these peanut butter Nutella swirl cookies were invented.

    Honestly, these cookies are so easy to make. They are totally fool proof.

    Basically, you just roll out the two kinds of dough then slap one on top of the other. After that you roll them up and slice them.

    I mean, how easy is that? It's so simple!

    In fact, you can also just mash bits together if you are too lazy to roll them out. Whatever works for you.

    Make these as soon as possible and let me know what you think of them!

    Ingredients

    • Peanut Butter - Use smooth peanut for this recipe.
    • Butter - I tend to use salted butter for cookies but you can use either salted or unsalted.
    • Sugar - This recipe uses both granulated white sugar and brown sugar.
    • Eggs - Use large eggs for these cookies.
    • Extract - I used vanilla extract for this recipe. You could also use almond extract.
    • Flour - Use all purpose flour for these cookies.
    • Baking Soda AND Baking Powder - I used both for this particular cookie recipe so the texture was exactly how I wanted it.
    • Salt - This helps enhance the flavour of the cookies. Do not omit unless you have problems with sodium.
    • Nutella - Hazelnut spread is a must for this recipe.

    How to Make Peanut Butter Nutella Swirl Cookies:

    Peanut Butter Portion:

    1. First, cream the peanut butter, butter and sugars by hand, or in a mixer.
    2. Then, blend in the eggs and vanilla and mix well.
    3. Next, add the flour, baking soda, baking powder and salt. Mix really well.
    4. After that, divide the cookie dough in half. Cover one and pop it in the fridge.

    Nutella Portion:

    1. First, grab the remaining half of the dough and pop it in the mixer, add the Nutella, turn mixer on and blend until it's combined well.
    2. Next, place the mixture in a bowl, cover it with plastic wrap and pop it in the fridge for an hour.

    Putting It Together:

    1. Preheat the oven to 350 degrees F.
    2. Next, remove the cookie doughs from the fridge.
    3. Sprinkle some flour on your work surface and roll out the peanut butter dough.
    4. Then, roll out the Nutella dough.
    5. Next, place peanut butter dough on top of the Nutella dough.
    6. Roll the two up into a log. It's okay if it's not perfect.
    7. Then, use a knife or cutter and slice the cookie dough log into pieces.
    8. Next, place the cookies on the parchment lined cookie sheet.
    9. Then, place the cookies in the oven and bake for about 12 to 15 minutes.
    10. Lastly, remove them from the oven and allow them to cool on wire rack.
    11. Serve, store or eat 'em all!

    Peanut Butter & Nutella Swirl Cookies

    A wonderfully easy way to make cute peanut butter and nutella cookies.

    Equipment

    • Cookie Sheet
    • Parchment Paper
    • Stand Mixer
    • OR
    • Hand Mixer
    • Cooling Rack

    Ingredients

    For the Peanut Butter Portion:

    • 1 cup peanut butter
    • 1 cup butter
    • 1 cup granulated sugar
    • 1 cup brown sugar
    • 2 large eggs
    • 1 tsp vanilla
    • 3 ½ cups all purpose flour
    • 1 tsp baking soda
    • 1 tsp baking powder
    • ½ tsp salt

    For the Nutella Portion:

    • 1 cup Nutella this gets added to the dough once it's divided, explained below
    US Customary - Metric

    Instructions

    For the Peanut Butter Portion:

    • Preheat oven to 350 degrees F.
    • Cream peanut butter, butter, and sugars together in a stand mixer (or use a bowl and hand mixer).
    • Blend in eggs and vanilla, mixing well.
    • Add flour, baking soda, baking powder and salt, combine thoroughly.
    • Now divide the dough in half, cover one and set it in the fridge.

    For the Nutella Portion:

    • Using half of the peanut butter dough you just divided stick it back in the mixer, add 1 cup of nutella and give the mixer a whirl till it combines well.
    • Place in a bowl, cover it and stick in the fridge for about an hour.

    Putting it together:

    • Preheat oven to 350 degrees F.
    • Remove dough from the fridge.
    • Sprinkle some flour on your work surface and roll out the peanut butter dough.
    • Now roll out your nutella dough. You can do it separately and then place on top. Or if you're lazy like me you can just do it on top of the peanut butter portion and just adjust the sides with your hands if it makes it spread too much underneath. I'm a rebel.
    • Now roll it up. It's okay if it's messy. These aren't called perfect swirl cookies.
    • Once you roll the log up, take a cutter, I used a dough scraper for pizza, and cut them into cookie sized portions.
    • Lay on a parchment lined cookie sheet.
    • Bake for about 12 to 15 minutes, starting to check around the 10 minute mark.
    • Remove from oven and allow to coolfor a few minutes. (good luck with that!)
    • Transfer to a wire cooling rack and let cool completely. (really, good luck with that)
    • Serve with a big old "we love pb & nutella" smile!

        I decided to cancel BSP so I can focus on some health issues. I need a big chunk of time to try to get my IBS under control with less meds. So I booked off 12 weeks this summer to focus on that. I'll miss meeting you. The only other planned conference right now is Mixed in the fall.

        Ha, I wish I had time to bake but I highly doubt that'll be happening. We'll have to make up for it by hitting a bakery together or something. I'm sure there's tons of great foodie choices there. If I nod off during any sessions please kick me...hard. I'm so exhausted from the last trip. Not sure why I thought two close together was a good idea. lol
